Blueberry Crisp

The other night I brought the side and dessert to a couple in my Bible class who had just had a baby. I had been having some major blueberry cravings lately, so I decided to go with blueberry crisp. I didn’t have enough blueberries to double the recipe that night so I could have some, so I just set aside an individual portion and gave them the rest! When I got home from delivering the food, I popped my single serving in the oven and holy cow, let me tell you, I wished I had more! This stuff is incredible! So, stop whatever you’re doing, head to the grocery store and get these ingredients!

Preheat oven to 350 degrees.

Combine the blueberries, sugar and flour, and toss to mix. Put in a buttered shallow baking dish (pie pan or 8×8 brownie pan). 

To make topping, combine flour, sugar and butter and mix until it looks like course crumbs. Add oats and cinnamon and mix a little more. Spread topping evenly over fruit and pat down gently with your fingertips.

Bake until the top is light brown and crisp, about 35-40 minutes.  

Serve warm with ice cream. Seriously, don't skip this step!
